Fresh cardamoms are plump and olive or green in colour. However, if the cardamom pods look too green, there may be artificial colours used to make them seem fresh
The peppercorns should be a relatively uniform color, a signature of higher quality and more consistent flavor. Darker peppercorns are more flavorful.

Ajwain is a seed-like fruit often used in Indian cooking as part of a spice mixture. It looks similar to fennel and cumin seeds and is highly fragrant, smelling like thyme.
Amaranth is an ancient grain that is similar to quinoa. The small, light tan colored seed is cooked similarly to rice and oats and eaten as a pilaf or porridge.
Black cumin also called black seed, black caraway, Roman coriander, kalonji, or fennel flower, annual plant of the ranunculus family grown for its pungent seeds, which are used as a spice and in herbal medicine.
Shahi Jeera (known as Sajeera or Kala Jeera) are the dark brown to black coloured caraway seeds. Caraway fruits are 2 mm long, crescent-shaped achenes with five light ridges.

The two main varieties of coffee viz., Arabica and Robusta are grown in India. Arabica is mild coffee, but the beans being more aromatic, it has higher market value compared to Robusta beans. On the other hand Robusta has more strength and is, therefore, used in making various blends.
Indian Arabica Coffee AA
The AA grade is usually used to refer to the highest grade of normal coffee beans. These are handpicked to have their quality ensured and are usually graded by size and density.
Indian Arabica Coffee A
100% Arabica Coffee blended with care to bring out a well balanced cup with a combination of heightened sweetness, pleasant acidity, smooth and resonant finish.
Indian Arabica Coffee B
Minimum 75% by weight retention on a sieve with round holes of 6.00mm. Not more than 1.5% by weight shall pass through a seive with round holes of 5.50mm.
Indian Robusta  Coffee AA
A great robusta coffee, the "AA" refers to the high quality of the bean. India produces good robusta coffees, they give just as much care and attention to their robusta as the arabica plant.
Robusta coffee from India is one of the world’s great Robustas. Generally roasted robusta beans produce a strong, full-bodied coffee with a distinctive earthy flavour.
The different plantation grades are: Pea berry (oval shaped beans) A (first size in flats- bold, heavy and well formed) B (slightly smaller than O or A)

Brilliant blue FCF is a synthetic organic compound used primarily as a blue colorant for processed foods, medications and cosmetics.
Carmoisine is a synthetic food color used to give food products their red coloring. It is made from disodium salt and is widely used in the United Kingdom.
It is used mainly in chocolate cakes, but can also be found in desserts, cookies, candy, chocolate drinks, ice creams etc.,
Erythrosine is an organoiodine compound, specifically a derivative of fluorone. It is a pink dye which is primarily used for food coloring.
It is used drugs and cosmetics, cocktails, tinned fruits, biscuits, chocolate, dressed crabs, garlic sausage, sweets, bakery and snack foods.
Green S can be used in mint sauce, desserts, gravy granules, sweets, ice creams, and tinned peas.
Indigo carmine is a synthetic color, although it used to be extracted from plants of the genus Indigofera. Indigo carmine are mainly used in coatings, ice creams, and confectionary.
Patent Blue V Food Color is also recognized as Sulphan Blue and consists of dark bluish synthetic dye that finds their use in food beverages. Patent blue is aniline dye and it is one of the most common dyes used.
Ponceau 4R Food Colour is a synthetic colourant that may be used as a food colouring. It is commonly known as strawberry red azo dye.
Quinoline yellow has a yellow-green color. It is an organic compound of heterocyclic type.
Red 2G imparts light red color, producing cherry to blood-red shades in foods. Red 2G is a synthetic red azo dye that is soluble in water and slightly soluble in glycerol.
Sunset yellow is used in foods, cosmetics, and drugs. Sunset yellow FCF is used as an orange or yellow-orange dye.
Tartrazine is a synthetic lemon yellow azo dye primarily used as a food coloring. It has been frequently used in the bright yellow coloring of imitation lemon filling in baked goods.
